Maccheroni, Marinara and Mama's Chicken

There is parmesan in the marinara (cook some cheese rind with the sauce for that extra flavor kick. But not too long!) and in the breading. Just in case you wondered why there isn’t a mountain of grated cheese. For me, there can be such a thing as too much cheese. It drowns all the other delicate flavors.
